Fresh figs with blue cheese and rosemary honey

The deep sweetness of figs calls for a contrast that can create balance, ideally with a rich and full-bodied flavour. That is why fully ripe, fresh figs pair perfectly with strong cheeses and honey that has been flavoured with either fig leaves or rosemary.

3 sprigs of rosemary
6 tbsp honey
7–8 fresh, ripe figs
4 slices of coarse rye bread or sourdough bread
2 tbsp olive oil
200 g blue cheese, e.g. Blue Cornflower, Danablu, Roquefort or Stilton

Instructions

Method:

Remove the leaves from the rosemary, chop them roughly and bring them to the boil in a small saucepan with 2 tbsp of honey. Let it boil for 1 minute, then pour it into a bowl with the rest of the honey.

Cut the figs into 4 or 6 wedges, depending on their size.

Brush the bread slices with a little olive oil and grill them on a grill pan.

Break the blue cheese into rough pieces and place them on the warm bread along with the figs. Spoon the rosemary honey over the figs and cheese and serve immediately.
