Potato salad

A classic potato salad made with small new potatoes must be one of the best accompaniments to summer meals. Cooking the potatoes to perfection is essential for the success of the salad.

500g boiled potatoes (boiled in salted water with lovage)
80g kohlrabi
80g radishes
100g diced pickled gherkin
150g smoked cheese
100g mayonnaise
Chopped chives
Salt and freshly ground pepper

Instructions

Boiling potatoes

Boil the potatoes in water with plenty of salt (about 2 tbsp) and, if you like, a little lovage. Bring the water to the boil before adding the potatoes. Cook the potatoes for 6–8 minutes (you can prick them lightly to check) and then leave them to stand for a couple of minutes before draining the water.

Otherwise, here’s what to do:

Mix the smoked cheese and mayonnaise together. Dice the kohlrabi, radishes and pickled gherkin into small cubes, and mix them into the cream. Cut the potatoes into thick slices and toss them in. Season with salt and freshly ground pepper. Garnish with chives and thin slices of radish. ENJOY!
