If you can’t get hold of fresh pearl onions (please don’t use frozen ones), you can always use normal onions and cut them into quarters.
Place the onions in lukewarm water and leave them to soak for about 15 minutes; this makes them easier to peel.
Heat a pan with a little olive oil and fry the onions over a high heat until they brown. Shake the pan so the onions don’t burn. Once the onions have browned, add the remaining ingredients: honey, white wine, herbs, salt and pepper.
