Green remoulade 

A classic with a new look.

Ingredients

Green remoulade 
3 tbsp capers
4 tbsp gherkins
100 ml chopped pickled green tomatoes (find the recipe here in the recipe archive)
100 ml chopped herbs – tarragon, chervil and dill
1 portion of mayonnaise
Juice of half a lemon (if desired)
Salt and freshly ground pepper
Homemade mayonnaise
2 egg yolks
1.5 tbsp Dijon mustard
1 tbsp white wine vinegar or apple cider vinegar
500 ml of neutral-tasting oil – maize, grape seed or sunflower
1–2 tsp sea salt
Freshly ground pepper
1–2 tbsp cold water

Instructions

Green remoulade

Finely chop the capers and gherkins. Roughly chop the green tomatoes and herbs. Mix everything into the mayonnaise and season to taste with salt, pepper and, if desired, lemon juice.

Homemade mayonnaise

Homemade mayonnaise takes less time to make than it does to pop down to the local supermarket and buy a jar. It takes your remoulade to a whole new level.
